▢ 1 kg waxy potatoes

▢  Double cream, 2 cartons

Step 1: 🌿🌟 Preheat the oven

 

Turn the oven on to 160°C (325°F).

 

Step 2: 🌿🌟 Prepare the potatoes and salmon

 

Gently butter a shallow baking dish.

Peel the potatoes:

- you can peel them if you like, or leave the skin on

- and slice them no thicker than a 1 euros coin.

 

Step 3: 🌿🌟 Bake the potatoes with the salmon pieces

 

Arrange the potato slices and smoked salmon pieces in the baking dish.

Pour the cream over the potatoes and smoked salmon until they are covered.

Bake for an hour, or possibly longer, until a nice golden

brown crust forms on top of the cream.

 

Note: Serve with a quick and easy steamed watercress salad or leeks or broccoli.
